Meet Saboré’s New Internationally Acclaimed Executive Chef Valero

Saboré Restaurant in Tioga Town Center has become a destination for global cuisine for the past three years. A world-fusion restaurant established with a variety of European, South American, Mediteranean and Asian inspired tastes, Saboré’s namesake comes from the word “sabor” meaning “flavor.” Saboré prides itself on its mouth-watering dishes that take guests on a trip around the world, highlighting exotic flavors and ingredients from countries such as Argentina, Japan, Spain and Italy. The addition of signature dishes such as the Vieiras Tartar and the Duck Tacos gives the new menu a well-traveled feel, and aligns with Saboré’s commitment to culinary advancements through new dishes, flavors and techniques.

 

Chef Valero began his culinary career at the Sant Celoni restaurant in Madrid, a restaurant owned by celebrated international chef, Santi Santamaria. While undergoing culinary training, Chef Valero worked hand in hand with Chef Santamaria to cultivate his Spanish fare’s flair. During his tenure with Sant Celoni, the restaurant was awarded two coveted Michelin stars from the Michelin Restaurant Guide, which reviews and rates only the top restaurants in the world.

 

After taking in a world of culinary knowledge from Chef Celoni, Chef Valero went on to train at the Zalacain restaurant in Madrid, Spain, which was the first restaurant in Spain to be awarded three stars in the exclusive Michelin Red Guide. He had the honor of serving guests such as the King of Spain, Juan Carlos I, and his wife, Sofia, as well as many other dignitaries and notables.

 

Chef Valero later served as chef for La Tirana Restaurants in Marbella, Spain and Madrid, Spain. In 2012, he was appointed executive chef of Ramses restaurant in Madrid, Spain. Ramses is a very well-known and trendy restaurant in Madrid and the only restaurant in Madrid that was designed by internationally renowned French designer, Philippe Starck. Training under top chefs in the world, and having served as cook, chef and executive chef in some of the top restaurants in Spain, Chef Valero has established himself as an elite international chef.

Bar Manager, Billy Bob is a certified mixologist who has a love for mixing up crafty cocktails and brings a lively personality to the mix with his southern roots and cowboy hat.
